On the seafront at Mers-les-Bains, a new chapter is being written for L'Itinérance. Completely renovated in 2023 on the initiative of Jonathan Caron - its owner and manager - the hotel-restaurant now welcomes a child of the North, chef Victor Benoît. After a tour of some of France?s most prestigious kitchens, this young chef returns to his native region. His path to excellence has given him the techniques, knowledge and gestures that today enable him to sublimate the Picardy coast terroir, the landscape of his childhood that has become an inexhaustible source of inspiration.
